Book review - Wedding Cake art and design. Professional approach by Toba Garret, Wiley 2010
What are the options a couple has regarding their wedding cake: the local baker, a caterer or a cake artist. These options will vary with regard to designs, icings or fillings. Of course if it needs to be top of the top, and this does not necessarily mean top price, it needs to be a wedding cake designer. Unless the available designs at the local bakery have struck a cord with the wedding couple and have a special meaning to them. A designer or a couple looking for inspiration can certainly look in Toba Garret`s ``Wedding Cake Art and Design``. Or a designer that is maybe stuck in the creation or production process.
Developed on four sections – 1.designing the cake, 2.setting up a cake design business, 3.recipes and flavor combinations and 4.templates and cake cutting guides -, the book is written for a cake designer and contains steps necessary for the typical process of a cake design business both in working with the customers (what the clients need to brings at the first meeting, the firs contact, paid consultation, payment stages) and working for the customers (size of the cake, cost, flavor combinations, baking and designs, transportation and assembling).
The designs investigated are classified as 10 different types: creative, romantic, textured, modern, wedgwoodinspired, chocolate, seasonal, fashion, floral and textile. These chapters offer detailed walk trough, step by step, in creating at least one cake for each of the designs, complete with all elements from icing, scallop design, leafs ribbons to flowers, all of which can, of course, be reused and recomposed in new original design cakes. These step by step guides offer all sorts of important details regarding the combination and contrast we need to look for, instruments and materials, recipes even pays attention to whether the designer is right or left handed!
The wedding design cake works also as a show not just a displayed art piece waiting to be consumed. The whole wedding event is a staging event but the cutting of the cake is probably the most common feature of all weddings. The couple together with the cake artist will design the cake and most of these designs have behind them a story, personality features and important life or lifestyle details. The cake is developed in successive rounds by the artist, according to unique elements, and presented to the couple. Than at a specific moment within the wedding the cake is presented to the audience attending. If the cake is unique and has been designed for this specific couple, this will add content, meaning and ``eventness`` to this classical cutting of the cake moment.
Besides drawing attention and making evident how the wedding cake can have ``meaning`` and what are some options to producing the design, a clear statement is made in clarifying the cake designer`s role as an artist (creativity + craftsmanship) Thus, each of the design chapters introduces the process of thinking and creation related to this meaningful food: introducing and getting to know the client (profession, hobbies, type of wedding, colors or other elements considered); describing the consultation; three possible idea designs and how these ideas are relevant to what the clients want.
